Defects found in sausages from butchers in Graubünden and Glarus

In four sausages, the declared pork and beef content deviated significantly from the laboratory findings, as the Graubünden Office for Food Safety and Animal Health wrote in a press release on Friday. Undeclared chicken meat was found in two other sausages during the inspections in January.

The lack of information on the country of production, the lack of highlighting of allergenic ingredients or the use of a best-before date instead of a use-by date were also frequently criticized. The butchers were given deadlines to rectify the deficiencies, as the Office for Food Safety and Animal Health went on to say.

The investigations focused on determining the meat content. The fat, protein and salt contents were also checked and compared with the declaration. Compliance with the general declaration regulations was also checked, the press release continued.

For a final assessment, the recipes were requested from the butchers and the quality guidelines of the Swiss Meat Association were used for traditional sausages such as Cervelat, Wienerli and veal sausage. The Graubünden Office for Food Safety and Animal Health is also responsible for inspections in the canton of Glarus.
